Can day old tomato sauce kill someone?

Was watching Restaurant Impossible last night and was left scratching my head when "Chef" Robert told the kitchen staff that the day old tomato sauce that had been left out could "kill someone." Any chefs/food safety experts have any insight here?


  • Jesse - I'm in the middle of taking a ServSafe course where we're learning about all these different scenarios. Basically, a lot of different factors (like time, temperature, moisture, oxygen, etc. etc.) come into play, but one of the most important thing to ask is if the tomato sauce ever entered the 'danger' zone of 41-135F (optimal range for bacteria to thrive in).
