What can you do with broccoli stems?

A few hunks of plant fiber after making broc & cheese, or stir fry.  I can never figure out what to do with it, but my girlfriend hates wasting "food".  Might be generous to call it that, but there are definitely some nutrients for you there.  What do you guys do with these things?

  • 455797Kyle Graynor I don't have a good answer for this, but I was also wondering what to do with asparagus stems after you break them off.


  • As long as you peel the tough skin of the stems, they're perfectly edible!  Broccoli and asparagus stems can be tough to eat as-is, so I like to take a peeler (or a mandoline) and create thin ribbons for a salad.  Toss with a simple vinaigrette of lemon juice, good EVOO, salt and pepper, and you're all set.

  • When I was growing up, my brother would eat the tops and I would eat the stems, covered with american cheese and microwaved for a little bit.  I strongly recommend it.
